Can I unpost items that have been matched on a bank rec?

No, if an item has been allocated to another document, submitted on a VAT Return or matched in a bank rec then you cannot unpost it. You can create a reversal that will produce a contra entry on the cashbook side of the bank rec to be matched to a correction else you will have to unlock and unmatch the bank rec in which the match lies in.
